* Terms & Meanings *

  • Stir: combining all of what is in a bowl, pot or saucepan.
  • Whisk: using a whisk or fork to incorporate air and make a light and fluffy mixture.
  • Fold: gently mixing light ingredients together using an over-and-under turning technique.
  • Cream: mixing butter and sugar together on a moderately high speed until well blended, fluffy and pale yellow.
  • Zest: using a grater to peel off small pieces of citrus fruit skins (like lemon or orange).
  • Grease: covering a baking pan with oil or butter to prevent food from sticking.
  • Knead: pushing and turning dough to mix and strengthen the ingredients.
  • Season: add flavor to food by adding herbs, spices, salt and pepper.
  • To Taste: adding more of an ingredient (usually salt/pepper) to suit your taste.
  • Bake: cooking in an oven under a dry heat without direct contact with the flame.
  • Broil: to cook food under a direct source of heat.
  • Sauté: cooking gently in a small amount of fat (like butter or oil).
  • Boil: cooking by putting food into hot bubbling liquid.
  • Simmer: cooking food in a liquid that is almost boiling (you will see little bubbles).
  • Emulsify: combining two liquids that do not usually mix together by mixing them forcefully.
  • Stir-Fry: cooking food at a high heat in a small amount of oil, while stirring constantly.

Dish Name: Sugar Cookies

Category: Sweets/Desserts

Season: Any

Makes + Servings: 2½ dozen

Cook Time: 40 minute prep time + 12 minute cook time = Roughly 1 hour to prepare if you account for goofing off.

Equipment:
  • Oven or equivalent.
  • Measuring cups, liquid measures and spoon (tsp/tbsp) measures.
  • Some form of fine-mesh strainer for sifting the flour.
  • At least 3 mixing bowls.
  • Whisk, mixer or fork for beating the eggs.
  • At least 1 cookie/baking sheet.
  • Something to grease your baking sheet (no-stick cooking spray) or parchment paper.
  • Cookie cutters of any shape/size.
  • Flat surface for rolling out dough.
Ingredients:
  • 2 ¼ cup sifted flour
  • ½ tsp salt
  • 2 tsp baking powder
  • cup shortening
  • 1 cup sugar
  • 2 eggs, beaten
  • ½ tsp vanilla
  • 1 tbsp milk (% does not matter)
  • cinnamon (measure with your heart)
Instructions:
  1. Preheat oven to 350°F.
  2. Sift flour, salt and baking powder together.
  3. Cream shortening and sugar together.
  4. Beat eggs.
  5. Add beaten eggs, milk and vanilla to the mixture from Step 3. Combine.
  6. Add the sifted flour mixture from Step 2 to the combined mixture from Step 5.
  7. Roll out the dough on a flat surface dusted with flour. The surface should be dusted with flour beforehand to keep the dough from sticking.
  8. Grease cookie/baking sheet(s) w/ no-stick spray or line with parchment paper.
  9. Once dough is rolled out/flat, cut out cookie shapes with your cookie cutters.
  10. Sprinkle the cookies with a little sugar and cinnamon.
  11. Place cookies on cookie/baking sheet.
  12. Bake for twelve (12) minutes.

The Real Irish Coffee (Aka Ireland recipe)

Cream
Sugar
Strong Coffee
Whiskey

Heat a stemmed whiskey goblet
Pour in one jigger (shot glass) of whiskey
Add one spoonful of Brown sugar
Fill with strong black coffee within one inch of the brim
Stir to dissolve sugar
Top off with whipped cream, aerated so that it spills over the back of the spoon that it floats.
Do not stir after adding cream. The true flavor is through the Irish whiskey and cream mixes.

Just something of a quick, easy little upgrade for the savior of broke college wallets. Also has the side effect of making it much more substantial and filling. The listed ingredients are just the specific ones I use for my preferred flavor, you can substitute other flavors or similar stuff, or even add more to (like eggs or vegetables, on occasion) as long as the overall amounts remain the same. This isn't exact science or gourmet cooking, this is making something that tastes good.

Dish Name: Cream of Mushroom Ramen

Category: Soup

Season:

Makes + Servings: Between 1 to 4 depending on portion size and hunger

Cook Time: 5 to 10 minutes

Equipment:
• 1 pot
• Knife
• Stirring utensils of choice
• Bowl/serving vessel of your choice
• Fork/spoon/chopsticks

Ingredients:
• Maruchan soy sauce flavor instant ramen, two packs
• Cream of mushroom soup, low-sodium, one 10.5 ounce can
• Costo Kirkland Signature canned chicken, one 12.5 ounce (7 ounce drained weight) can
• (Optional) Sliced white mushrooms

Instructions:
• If using raw mushrooms, slice into favorable shapes/pieces and saute over medium heat until browned and cooked through; drain if necessary and set aside
• In pot, add half the amount of water needed for the ramen (2 cups total, in this case)
• Bring water to simmer
• Add cream of mushroom to water, stir until smooth and no lumps remain (aside from the bits of mushroom)
• Bring soup base to boil, add seasoning packets from ramen and stir until fully incorporated
• Add ramen to soup, and cook as per package instructions (3 minutes total in this case)
• Drain excess water from canned chicken
• Take pot off heat, and add chicken to it, let sit until heated through
• Pour into bowl(s), and consume, preferably while still hot (instant ramen rapidly degrades in quality, after all)
